Drying herbs

Although with many herbs the fresh leaves give the best flavour or fragrance, dried home-grown herbs can be a good substitute, especially in winter months when fresh herbs are unavailable or in short supply.

DRYING HERBS: GENERAL PRINCIPLES

• Always gather the herbs on a dry, preferably sunny day so that the plants are already dry on the surface.

• Hang flowering stems upside down, so the stalks dry when they are straight rather than drooping over with the weight of the flower heads.

• Hang herbs in small bunches with sufficient space between them to allow for air circulation.

• Hang them to dry in a cool, dry place.

• Do not store herbs until they are completely dry – any moisture left in the herbs could encourage them to rot once sealed in a container.

• Store dried herbs in an airtight jar or tin, to maintain freshness, and use them within a year.
